What happens when the oil gets heated too high then?

If you heat any oil too high you denature it’s structure and make it behave like a trans fat. So heated olive oil is like a trans fat, not good for health or body composition!
Coconut oil is stable at high temperatures but be careful not to make any oil burn – even coconut oil can denature!
